| 1 can chopped olives, drained |
| 1 cup(s) cottage cheese |
| 2 tablespoon(s) parsley, chopped |
| 1/2 teaspoon(s) garlic powder |
| 1/2 teaspoon(s) salt |
| 1/4 teaspoon(s) pepper |
| 8 flour tortillas |
| 1 medium onion, chopped |
| 1/2 green pepper, chopped |
| 15 ounce(s) can tomato sauce |
| 1 tablespoon(s) oil |
| 4 ounce(s) can chopped green chilies |
| 2 teaspoon(s) chili powder |
| 1 teaspoon(s) sugar |
| 1 drop(s) shredded cheddar cheese |
| 1/2 teaspoon(s) garlic powder |
Beef Enchiladas - Grandma Hardy Directions
- In a skillet, brown the beef, drain the fat. Combine beef with cottage cheese, olives, parsley, garlic powder, salt and pepper. Place about 1/3 cup filling on each tortilla, roll up. Place tortillas, seam side down, in an ungreased 13x9 baking dish.
- For sauce; saute the onion and green pepper in oil til tender. Add tomato sauce, green chilies, chili powder, sugar and garlick powder. Pour over tortillas.
