| 1 refreigerated pie crust |
| 1/4 cup(s) corn starch |
| 3 tablespoon(s) flour |
| 1 3/4 cup(s) sugar |
| 1/8 teaspoon(s) salt |
| 4 egg yolks, slightly beaten |
| 1/2 cup(s) lemon juice |
| 1 tablespoon(s) grated lemon peel |
| 1 tablespoon(s) butter |
| 4 egg whites |

Lemon Meringue Pie Directions
- Fit pie crust into a 9 inch pie plate. Crimp edges to look pretty. Refiegerate 1/2 hour to let rest. Prick entire surface evenly with fork. Bake 8 to 10 minutes or until golden brown. Cool on a rack
- To make filling: In medium saucepan, combine cornstarch, flour, 1 3/4 cups sugar and the salt, mixing well. Gradually add 2 cups water, stirring until smooth. Over medium heat, bring to boiling, stirring occasionally; boil?1 minute, til shiny and translucent.
