1/4 cup(s) butter
1/8 teaspoon(s) white pepper
2 egg yolks
1/4 cup(s) onion, chopped

2 pkg chopped fresh spinach, cooked according to package directions and squeezed dry

Creamed spinach and potato au gratin Directions

  1. Make mashed potatoes; place potatos and salt ina large saucepan; add cold water to just cover the potatos. Bring to boil, reduce heat and simmer 20 minutes or until potatos are tender. drain well and return to saucepan.
  2. Place pan over low heat and cook about 5 minutes stirring constantly with a wooden spoon until potatoes are dry. Using a portable electric mixer, beat potatoes on medium speed until smooth and no lumps remain.
