Roasted Sweet Potatoes with Honey and Cinnamon
I made these for the Hardy family Christmas dinner and it was a pretty good hit. It's a taste change from candied yams

| 4 sweet potatoes, peeled and cut into 1 inch cubes |
| 1/4 cup(s) Olive oil |
| 1/4 cup(s) honey |
| 2 teaspoon(s) ground cinnamon |
| cL salt and pepper |
Roasted Sweet Potatoes with Honey and Cinnamon Directions
- Preheat oven to 375
- Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over potatoes,
- roast for 25 to 30 min in oven or until tender
- Take sweet potatoes out of the oven and transfer them to a serving platter
- Drizzle with extra oil if wanted
