Sweet Pork Barbacoa - Cafe Rio Style
The first time I made this I had no idea if it was going to taste right. To be honest I'm not the biggest fan of these flavors, but my husband is! So when it was complete I asked him to taste it and he got the biggest smile on his face!!! If you like pork barbacoa, this is a keeper!

Sweet Pork Barbacoa - Cafe Rio Style Directions
- I know the ingredient list is redundant, but follow along, it's really not complicated.
- Place the pork in a large ziplock bag. Add 1 C Cola and 1/3 C brown sugar. Mix it around and, seal up the bag and place in the fridge for at least an hour. I left mine in the fridge overnight
- Add the pork to your slow cooker, and discard the marinade. Add in the garlic, onion, 1/2 tsp chili powder, water and 1 1/4 C cola. Put the lid on and cook on low for about 8 hours.
