| 1 lg ripe banana |
| 1 lg egg |
| 1/2 cup(s) peanut butter |
| 1/3 cup(s) unsweetened cocoa |
| 3 tablespoon(s) honey |
| 1 tablespoon(s) vanilla |
| 1/4 teaspoon(s) baking soda |
| 1 pinch of salt |
| 1/2 cup(s) heaping, mini chocolate chips, semi sweet or others if you choose, plus more for sprinkling over the tops of the muffins |
Double Chocolate Mini Muffins - flourless Directions
- Preheat oven to 400
- Spray mini muffin pan well with pam
- To a blender add everything except the chocolate chips. Blend on high til smooth and creamy
- Add chocochips and stir by hand so you don't crush the chips
- Using a Tablespoon or small cookie scoop drop rounded spoons into prepared pans. Each cavity should be filled 3/4 full
- Sprinkle tops of muffins with a few more chocochips
- Bake for 8-10 or until tops are domed and springy to the touch and a toothpick inserted into the center comes out
