  • 1/4 cup(s) oil
  • 1 teaspoon(s) salt
  • 1 cup(s) flour
  • 1 cup(s) corn kernals
  • 1 tablespoon(s) softened butter
  • 1 cup(s) yellow or white cornmeal
  • 2 large eggs, beaten
  • 1/2 cup(s) grated cheddar cheese
  • 1 tablespoon(s) sugar
  • 1 cup(s) buttermilk
  • 4 teaspoon(s) baking powder

Cheesy Corn Jalapeno Muffins Directions

  1. Preheat the oven to 400 degrees. Butter muffin pan or use liners.
  2. In a large bowl, combine the flour, cornmeal, baking powder, sugar, salt, and cayenne and mix well. In a separate bowl, beat together the eggs, buttermilk, and oil. Add to the dry ingredients, mixing just until it forms a batter, being creful not to overmix. Fold in the corn, cheese, and jalapenos.
  3. Divide evenly among the 12 muffin cups and bake until golden, 20-25 minutes. Remove from the oven and let sit in the pan for about 5 minutes before serving
