Lazy Chiles Rellenos

All the flavor of chile rellanos with a lot less work. This is great for breakfast, brunch or dinner.

Ingredients

For 8 people ()

Recipe

  • 1 large can chiles
  • 1/2 teaspoon(s) paprika
  • 1 1/2 cup(s) grated monterey jack cheese, cheddar cheese or pepper jack cheese
  • 1/4 teaspoon(s) cayenne pepper, optional
  • 5 large eggs
  • 2 cup(s) milk

Lazy Chiles Rellenos Directions

  1. Pre-heat oven to 325
  2. Spray a 9x13 pan with cooking spray
  3. Mix together eggs, milk, salt pepper to taste, paprika and cayenne.
  4. Open and drain the chiles, open up the chiles and lay half on the bottom of the pan
  5. Top with half the cheese, repeat layer of chiles and another layer of cheese
  6. Pour egg mixture over the top of it all
  7. Bake at 325 for 35 to 40 minutes or until no longer jiggly
  8. Cut into squares and serve warm
  9.  
  10. I have made this with all kinds of cheese and combinations of cheese, just use what you like!
  11. You can cook this in a hot water bath if desired. I have done it with and without, it works either way
