  • 2 teaspoon(s) vanilla
  • 2 1/4 cup(s) flour
  • 1/4 cup(s) powdered sugar
  • 1/2 cup(s) sugar
  • 1 1/2 cup(s) semi sweet chocolate chips
  • 1/2 teaspoon(s) baking soda
  • 1 cup(s) packed brown sugar
  • 8 ounce(s) cream cheese, softened
  • 1/2 teaspoon(s) salt
  • 3 eggs, lightly beaten
  • 1/4 cup(s) sour cream
  • 12 tablespoon(s) melted butter

Chocolate Chip Cookie Cheesecake Bars Directions

  1. Preheat oven to 325 degrees
  2. Line an 8x8 pan with greased parchment paper, set aside
  3. In a medium bowl whisk together flour, baking soda and salt.
  4. In a large bowl cream together butter, sugar and brown sugar.
  5. Stir in 2 eggs and vanilla
  6. Mix dry ingredients with wet ingredients just until a soft dough forms and flour mixture is incorporated
  7. Press half of dough into the prepared pan in an even layer
  8. Cover with 1 cup chocolate chips ( use more or less, depending on your taste)
  9. Prepare cheesecake layer, mix together Cream cheese, sour cream, 1 egg, powdered sugar and 1 tsp vanilla. Spread evenly over cookie layer
  10. Mix 1/2 cup chocolate chips into remaining cookie dough
  11. Drop cookie dough over cheesecake layer until completely covered
  12. Sprinkle over more chocolate chips if desired
  13. Bake for 35-40 minutes or until center of cookie is set and golden
  14. Allow bars to cool in pan and then refrigerate for at least 3 hours, overnight is best
  15. Slice into bars, store in fridge
