  • 1 cup(s) sugar
  • 2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) cinnamon
  • 1/4 teaspoon(s) ground ginger
  • 1/2 cup(s) shredded carrots
  • 1/2 cup(s) raisens
  • 1/2 cup(s) chopped walnuts
  • 8 ounce(s) crushed pineapple
  • 2 eggs
  • 1/2 cup(s) butter, melted
  • 1 teaspoon(s) vanilla

Carrot and Raisen Muffins Directions

  1. Combine, flour, sugar, baking powder, cinnamon, ginger. Stir in carrots, raisens and nuts.
  2. Add pineapple, eggs, butter and vanilla
  3. Bake 350 for 20-25 minutes
  4. Yield about 12 muffins
