These are great for a brunch or buffet breakfast. These can be made into mini muffins too, just reduce the cooking time

1/2 pound(s) bulk sausage
12 eggs
1/2 cup(s) chopped onions
1/4 cup(s) chopped green pepper
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 teaspoon(s) garlic powder
1/2 cup(s) shredded cheddar cheese

Scrambled egg muffins Directions

  1. In a skillet, brown the sausage, drain. In a bowl beat the eggs. Add onion, green pepper, salt, pepper and garlic powder. Stir in sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups. Bake 350 for 20-25 minutes or until a knife inserted near the center comes out clean.

  3. This basic recipe can be adjusted or ingredients added to depending on your tastes. Be creative! Add bacon, green onion, summer squash, different cheeses, it's an easy thing to play with.
